摘要
目的了解杭州地区即食鱼类制品中铬(Cr)、镍(Ni)、无机砷(As)、镉(Cd)、锡(Sn)、汞(Hg)、铅(Pb)7种有毒元素污染状况,为完善水产制品中有毒元素限量标准和食品安全风险预警提供依据。方法 2016年在杭州地区的商店及网上商城随机抽取15类共132份即食鱼类样本,采用微波消解法进行样品处理,电感耦合等离子体质谱法和高效液相色谱-电感耦合等离子体质谱法进行有毒元素含量测定。结果所有样品中,只有部分食品镉含量超标,其余金属未发现超标。鳕鱼、鱿鱼和香鱼制品的镉超标率分别为21.1%、65.0%和30.0%,其中鱿鱼中镉超标情况最为严重。结论 2016年杭州市市售即食鱼类制品中7种有毒元素污染水平总体不高,但部分食品中镉污染情况相对较严重,建议加大监管力度。
Objective To investigate 7 toxic elements including chromium,nickel,inorganic arsenic,cadmium,tin,mercury and lead contamination in commercially fish snack in Hangzhou,so as to provide basis for improving the relevant standards and the risks pre-warning mechanism for food safety. Methods 132 fish samples in 15 types were randomly collected from stores and online shops in Hangzhou. The samples were microwave digested and the contents of seven toxic elements were determined by inductively coupled plasma-mass spectrometry( ICP-MS) and high performance liquid chromatography coupled with ICP-MS. Results Only cadmium content exceeded the detection of limit in partial samples. Other six toxic elements were not over the limit. The over-exceeding rate of cadmium was 21. 1% in cod,65. 0% in squid and 30. 0% in ayu samples,with the highest in squid. Conclusion The overall contamination level of seven toxic elements in commercially fish snack was not high in Hangzhou. However,serious cadmium contamination was found in several kinds of samples. It is thus advised that the government should strengthen the supervision.
