摘要
从5种原乳(牛、山羊、水牛、牦牛和骆驼乳)中分离出乳脂肪球膜(MFGM)。对5种MFGM中蛋白质、氨基酸、脂质、多糖、微量元素和灰分的质量分数进行了分离和测定。对5种MFGM组分的对比结果显示,5种MFGM之间各组分差异显著(p<0.05)。本研究旨为进一步研究MFGM蛋白质组和功能特性提供借鉴。
In this research, milk fat globule membrane (MFGM) was separated from five different species raw milk (cow, goat, buffalo, yak and camel). Compositions of MFGM from five species milk, include protein, amino acid, lipid, polysaccharide, microelement and ash, were separated and analyzed. Comparison results showed that the differences of compositions in five MFGMs were significant (p〈0.05). Basic data and theory basis were provided in this study for the further research on MFGM poteomics and functional features.
