海藻糖对乳酸杆菌耐热和室温贮存保护作用的研究 被引量:4

摘要 乳酸杆菌不耐高温和室温贮存是其应用于饲料添加剂的一大限制因素,本试验旨在研究5%(W/V)的海藻糖对三株乳酸杆菌在高温处理和室温贮存条件下的保护作用。结果表明:海藻糖能显著提高乳酸杆菌耐热性和室温贮存的存活率,且不同菌株抗逆性能不同,其中F22菌株表现出较G31和H51两株菌更好的耐热性和耐贮性。添加海藻糖保护的F22菌株70℃处理5 min,活菌数为(6.0±0.1)×10~5cfu/m L,对照组为(1.2±0.1)×10~2 cfu/m L;室温贮存15 d,添加海藻糖的试验组存活率为(127.94±0.23)%,对照组为(89.45±0.78)%。由此可见,海藻糖可作为微生态制剂高温加工和室温贮存的保护剂,提高乳酸杆菌的耐热性和延长保质期。 Lactobacillus is not resistant to high temperature and room temperature storage,which is one of the main limit factor to its application in feed additives.This study aimed to investigate the 5%(m/V)of trehalose on three Lactobacillus under the condition of high temperature and room temperature storage.The results showed that trehalose can significantly increase survival rates of Lactobacillus thermal stability and room temperature storage, and different strain resistance was different. F22 showed better heat resistance and storability than G31 and H51.F22 in the added trehalose group was put in the condition of 70 ℃ deal with 5 min, the number of living bacterium was(6.0±0.1)×10^5 cfu/mL, the control group was(1.2± 0.1)×10^2 cfu/mL; Stored at room temperature for 15 days, survival rate of treatment group was (127.94±0.23)%, the control group was (89.45±0.78)%.It was concluded that the trehalose can be used as protectant in high-temperature processing and room temperature storage,which can improve the heat resistance of Lactobacillus and extend the shelf life.
