广州市某灌肠食品厂单核细胞增生李斯特氏菌污染监测 被引量:1

Investigation on the Listeria monocytogenes contamination status in some food factory in Guangzhou

摘要 目的了解预包装熟肉制品生产加工过程中单核细胞增生李斯特氏菌的污染状况,确定熟肉制品生产过程各个环节中该菌的分布情况和可能污染源。方法 2015年6月和9月各采样一次,采样在工厂各个车间进行,对操作人员、生产环境以及原辅料、中间产品、成品进行采样。依据国标方法检测单核细胞增生李斯特氏菌。结果在采集的119份样品中,单核细胞增生李斯特氏菌的检出率为21.85%,不同车间样品的检出率差异有统计学意义(χ~2=16.811,P<0.05),而不同种类样品的检出率差异无统计学意义(χ~2=0.112,P>0.05)。结论在灌肠食品的原辅料中单核细胞增生李斯特氏菌检出率高,生产过程中应注意消毒,防止发生食源性疾病。 Objective To evaluate the contamination status of pre - packaged ready - to - eat meals with Listeria monocytogenes and to identify the distribution of Listeria monocytogenes and the potential sources of pollution along the food processing chain. Methods Raw materials, intermediate products, finished products and end products as well as the operation staff and processing environment - associated samples were sampled in June and July 2015. All samples were tested for Listeria monocyto- genes based on the national standard method. Results The positive rate of Listeria monocytogenes in all 119 samples was 21.85% The difference among samples from different workshops had statistically slgnlficance(χ2 = 16. 811, P 〈0. 05), but the difference among different categories didn' t reach statistical slgmficance(χ2 =0. 112, P 〉0. 05). Conclusion The Listeria rnonocytogenes detection rate was high in raw materials, so it' s important to ensure adequate sterilization to prevent foodborne diseases. The procedure of this kind of pro - packaged food is reasonable and Listeria monocytogenes was killed and was not found in finished products and end products.
