Study on nutritive value of meat meal and its safety evaluation

摘要 本文以采集到的40份国产饲料级肉粉为研究对象,评价其常规营养指标和质量安全指标,旨在对肉粉的品质进行全面系统地调查,为生产上合理使用肉粉提供理论依据,为制定和修订饲料级肉粉标准提供参考数据。本试验采用国标法对肉粉常规营养指标进行测定,利用ICP-MS法、国标法对肉粉中6种常见重金属(铬、砷、铅、钒、镉、汞)进行定量检测。结果表明:肉粉的品质不稳定,常规营养成分波动较大,粗灰分、粗脂肪变异系数最大;粗蛋白质含量为60%~75%,也有少数样品低于50%;钙磷比接近2∶1,同时,肉粉中钙、磷含量波动较大;粗灰分含量为5%~15%,少数样品含量为15%~20%。国产肉粉中氨基酸种类较多,各种氨基酸含量分布不均,谷氨酸(Glu)含量最高,接近8%,其次是甘氨酸(Gly),接近7%,蛋氨酸(Met)、组氨酸(His)含量较低。在重金属方面,铬、砷、铅、钒、汞、镉平均含量未超出限量标准值,但少量样品出现重金属超标。综上所述,国产饲料级肉粉营养品质不稳定,氨基酸组成丰富,但含量差异较大,少量肉粉存在重金属超标现象,肉粉的质量安全问题应引起重视。 In order to comprehensively and systemically investigate the quality of meat meals,40 domestic feed grade meat meals were collected,and conventional nutrition indicators and safety indicators were evaluated,aimed to providing a theoretical basis for the actual production,meanwhile,the results can offer reference datas for design and amendment of national standard of feed grade meat meals.This experiment determined conventional nutritional indexes of meat meals based on the method of national standard.At the same time,six kinds of common heavy metals,for instance,chromium(Cr),arsenic(As),plumbum(Pb),vanadium(V),cadmium(Cd),mercury(Hg)were quantitatively detected by the method of ICP-MS and national standard.The results showed that the quality of the meat meals were not stable,conventional nutrients were volatile,crude ash and crude fat had a largest variation coefficient;the content of crude protein(CP) were 60% ~ 75%,a few samples were below 50%;the ratio of calcium and phosphate was closed to 2∶1;meanwile,calcium and phosphate were volatile;the content of crude ash were mainly 5% ~ 15%,a few samples were distributed in 15% ~ 20%.There were many kinds of amino in domestic feed grade meat meals and present a maldistribution.Meat meals had the highest content of glutamic acid,which was closed to 8%,followed by glycine,closed to 7%,methionine and histidine content were lower than others.For heavy metals,the average content of Cr,As,Pb,V,Cd,Hg were not beyond the limited values,however,a small amount of samples were overweight.The nutritional quality of domestic feed grade meat meals was not stable.It had rich amino acid compositions,but concentrations varied greatly,additionally,a small amount of samples were overweight.Therefore,the quality and security issue on meat meal should be taken seriuosly.
