摘要
牛乳是一种大众化食品饮料,掺假的现象时有发生。有些掺假通过感官检查就可以判断出来,但不少的掺假则应通过物理的和化学的方法才能做出判断。主要针对鲜牛乳的主要营养成分以及正常感官特点、牛乳中掺假的主要手段、主要的掺假物以及采用化学方法进行物质检测等方面进行探讨。
Milk is a popular food and beverage, adulteration phenomenon has occurred.Some adulteration can be judged by sensory examination, but many adulteration should pass judgment to the physical and chemical methods.The main means for fresh milk adulteration below the main nutritional components of milk and normal sensory characteristics, as well as the main adulterations using chemical methods and physical test is discussed.
