摘要
体外消化模型是代替体内研究食物蛋白消化的一种重要手段,具有简单易行、可复制等优点。然而体外消化效率受样本类型及消化条件的影响显著,如何更准确的模拟体内生理环境和消化过程,是建立体外消化模型的关键。本文详细介绍了目前已建立的不同类型的食物蛋白质体外消化模型,包括静态模型和动态模型、单室模型和多室模型、单酶体系及多酶体系消化模型,并分析比较其优缺点及适用范围,为根据不同研究目的选择恰当的消化模型提供理论参考,并为标准化体外消化模型提供支撑。
The in vitro digestion model is an important approach to investigate food protein digestion in vivo. It is convemente and reproducible.However, the efficiency in vitro digestion is significantly affected by the sample type and digestion conditions. How to simulate the physiological environment and digestion process more accurately is the key to establish the in vitro digestion model.This review stated the types of in vitro digestion models of food proteins in detail, including static model and dynamic model, monocompartmental model and multicompartmental model, single-enzyme model and multi-enzyme system digestion model.The scope of application and the distinction of the different types of in vitro digestion were also illustrated.This review can be a reference for researchers to select appropriate digestion model, and can help to establish standardization for in vitro digestion models.
