4个品种黄桃果实硬核期后和采后糖酸代谢规律 被引量:7

摘要 以遗传背景相似的黄桃品种‘锦香'、‘锦绣'、‘沪454'和‘沪452'为试材,研究其生长发育和采后贮藏期间果实糖酸组分及代谢规律。结果表明:‘锦香'和‘锦绣'果实的奎宁酸、苹果酸、蔗糖和果糖含量分别于盛花期后90 d和120 d处于相对稳定状态,说明‘锦香'和‘锦绣'果实分别于盛花期后90 d和120 d时风味形成,可进行果品的采摘;‘沪454'和‘沪452'果实的苹果酸、蔗糖和果糖含量分别于盛花期后140 d和150 d趋于稳定,奎宁酸含量均于盛花期后150 d时降至最低,建议‘沪454'和‘沪452'果实于盛花期后150 d左右进行采摘。采后第2天,‘锦香'果实的蔗糖含量出现高峰,之后呈急剧下降趋势,‘沪452'果实的蔗糖含量呈下降趋势。采后第6天,‘锦香'和‘沪452'果实的苹果酸呈下降趋势,综合得出‘锦香'的货架安全期为4 d;‘锦绣'黄桃果实蔗糖含量于第4天出现高峰,‘沪452'的蔗糖含量于第6天出现高峰;‘锦绣'和‘沪452'苹果酸含量于第8天呈急剧下降趋势,综合得出‘锦绣'黄桃的货架安全期为6 d,‘沪454'的货架安全期为8d。生长发育期间,果实有机酸呈下降趋势,蔗糖含量呈上升趋势;采收时,4个品种间苹果酸和总酸含量差异不显著,‘锦香'和‘沪454'果实蔗糖含量显著高于‘锦绣'和‘沪452';‘锦香'‘沪452'和‘沪454'中果糖/葡萄糖显著高于1,‘沪452'黄桃果实中果糖/葡萄糖的比例约等于1;‘锦香'黄桃的风味较为浓郁,‘沪454'和‘沪452'次之,‘锦绣'最低,果实糖酸组分及含量与果实的生育期呈非线性关系;整个贮藏期间,4个黄桃品种果实蔗糖和苹果酸含量均呈先上升后下降的趋势,存在糖酸代谢进程。综合得出:‘锦香'和‘锦绣'黄桃果实分别于盛花期后90 d和120 d时风味形成并趋于稳定,可进行采摘;‘沪454'和‘沪452'黄桃果实于盛花期后150 d左右进行采摘。‘锦香'、‘锦绣'、‘沪 In order to investigate sugar and acid postharvest, ' Jinxiang' , ' Jinxiu' , ' Hu 454' and ' metabolism and diversity of yellow-peach during growth and Hu 452' which were similar genetic background and the main variety of Shanghai were studied. The result showed that the fruit organic acid content was on the decline and the sucrose content was on the rise during the growth period. There were no significant difference between malic acid and total acid content during four varieties at harvest. The sucrose content of ' Jinxiang' and ' Hu 454' was higher than ' Jinxiu' and ' Hu 452' significantly. Fructose/glucose of ' Jinxiang' , ' Hu 454' and ' Hu 452' was higher than 1 significantly, fructose/glucose of 'Jinxiu' was about 1. The flavor of ' Jinxiang' was therichest,and then the ' Hu 454' and ' Hu 452’,' Jinxiu' was the lowest. Fruit sugar acid composition and content were not a linear with fruit growth period. There were sugar acid metabolism process;sucrose and malic acid content of four yellow peach varieties were in decline after rising first. All these showed that ' Jin xiang' and ' Jinxiu' could be picked at 90 d and 120 d after full blooming respectively, ' Hu 454' and ' Hu 452' could be picked at 150 d after full blooming. Shelves safety period of ' Jinxiang' ' Jinxiu ' ' Hu 452' and ' Hu 454' were 4 d,6 d,4 d and 8 d,respectively.
