摘要
猪肉在贮运销售过程中,易受细菌污染,最终导致其腐败变质。较短的货架期,使其流通受到了严重的限制,科学、合理、有效的复合塑料膜对猪肉的保鲜十分重要。根据近几年国内外的研究报告,综述了几种常用复合塑料薄膜对猪肉保鲜效果的影响,并对其发展做出了展望。
In the progress of storage and sales, pork is easily polluted by bacteria, resulting in the deterioration. The short shelf life has a severe restriction on the circulation. Scientific, reasonable and effective composite plastic film is very important to the preservation of pork. According to the research reports at home and abroad, effects of several kinds of composite plastic films on the preservation of pork were summarized, making a prospect of the development.
