但逢节庆,北方人多吃饺子,尤其是春节期间,除夕和初一都必须吃的,这算是北方人的一个共同饮食风俗了。老话常说,“好吃莫如饺子,舒坦莫如倒着（睡觉）”“饺子就酒,越喝越有”。把水饺叫做箍扎是胶州人特有的说法,毫不夸张地说,这个方言是胶州人的发明。箍扎的写法有“固扎”“馉馇”“固馇”“固飵”等好几种,说法由来也不尽相同。
The northerners often eat dumpling in festivals,especially the Spring Festival,during which people must have dumplings on the eve and the day of the Spring Festival.This is a common diet custom shared by the northerners.The dumplings are uniquely called Gu Zha by the Jiaozhou people.We can say without exaggeration that the name was the invention of the Jiaozhou people.There are several ways of writing Gu Zha,each of which has different origins.The first explanation is that it derives from the two basic actions of wrapping the dumplings:the action of putting the fillings on the round cover and wrapping it is Gu and the action of kneading the edges together is called Zha.Gu Zha,the two simple and easy words vividly and perfectly reveal how to make such food as dumplings.
