摘要
色值(AJC)是评价浓缩苹果汁品质的重要指标,为解决浓缩苹果汁色值稳定性低的问题,选择吸附树脂A#和B#对苹果汁进行处理.结果表明:吸附树脂处理可提高苹果汁的色值,吸附树脂处理后,浓缩苹果汁的糖度、pH、电导率、透光率、吸光度值、浊度、总酸和氨基态氮等理化指标符合GB/T 18963-2012的相关规定.在储藏过程中,浓缩苹果汁色值不断下降,其降幅在30.9%~42.2%;氨基态氮和电导率在储藏过程中也呈下降趋势,而总酸和pH值相对稳定.
he color value was one of the important index for apple juice concentrate ( AJC) , the apple juice was treated by adsorption resin and B^ in order to solve the problemof low stability. The results showed that the adsorption resin can improve the color value of AJC, sugar content, pH, conductivity, transmittance,absorbance value, turbidity, to- tal acid,amino nitrogen and other physicochemical indexes of AJC accorded with the na-tional standard GB/T 18963 - 2012 after being treated. The color value of AJC was de-creased , the rate of decline was 30. 9 - 42. 2% ,the amino nitrogen and electrical conduc-tivity also showed a downward trend, while the total acid and pH value were relatively stable during the storage.
