摘要
桂花作为重要的植物香源,不仅香味成分丰富,还含有大量黄酮、糖苷、多酚、萜烯等活性成分,是优良的纯天然功能性原材料。对桂花的活性成分及生理功能、提取工艺、桂花酒酿造工艺等相关研究作简要概述。
As an important fragrant source, Osmanthus fragrans contains rich flavoring substances and active ingredients such as flavonoids, glycosides, polyphenols, terpenes, etc. Accordingly, it could be used as superb natural functional raw material. In this paper, the research progress in the active ingredients of Osmanthus fragrans, their physiological functions, their extraction, and the production of Osmanthus fragrans wine were introduced.
