不同甜菜碱产品对肉鸡屠宰性能、肉品质及肌肉抗氧化性能的影响 被引量:7

Effects of different betaine on slaughter performance, meat quality and antioxidant capacity of breast muscle in broilers

摘要 试验旨在研究日粮中不同甜菜碱产品对肉鸡屠宰性能、肉品质及肌肉抗氧化能力的影响。试验选用1日龄AA肉鸡144只随机分为3组,每组6个重复,每个重复8只鸡。对照组饲喂基础日粮,试验组在基础日粮中分别添加500 g/t甜菜碱粉剂和500 g/t甜菜碱颗粒。结果表明,添加不同甜菜碱产品均可显著提高肉鸡胸肌率和腿肌率(P<0.05),显著降低胸肌滴水损失和MDA含量(P<0.05),显著提高p H值和a*值(P<0.05),甜菜碱颗粒显著提高胸肌粗脂肪含量(P<0.05)。综上所述,日粮中添加甜菜碱粉剂和颗粒均能有效提高胸肌率、腿肌率并改善肌肉品质和抗氧化性能,且甜菜碱颗粒的应用效果略优于粉剂。 In order to investigate effects of different betaine on slaughter performance, meat quality and antioxidant capacity of breast muscle in broilers. A total of 144 one-day-old Arbor Acres broiler chicks were randomly allocated to three treatments, each of which included 6 replicates of 8 birds. The control broilers were fed a basal diet and those in the treatment groups were fed the basal diet supplemented with 500 g/t betaine in powder or in granule, respectively. The results showed that: betaine supplementation significantly increased percentage of breast and thigh muscle (P〈0.05), reduced drip loss and MDA content (P〈0.05), and increased pH and a* value (P〈0.05). However, only betaine granule increased ether extract content of breast muscle (P〈0.05). In conclusion, betaine supplementation can improve the percentage of breast and thigh muscle, meat quality and antioxidant capacity of breast muscle, and betaine granule was slightly superior to betaine powder.
