摘要
本试验通过响应面分析法确定了草石蚕酶法制备低聚木糖的工艺条件,即p H为4,加酶量为379 mol/kg,酶解温度为54℃,酶解时间为94 min,此条件下低聚木糖含量达到6.92 mg/m L,与3个对照组相比分别高了15.1%、11.4%、9.5%,差异显著。同时,试验结果表明,低聚木糖对羟自由基和超氧阴离子具有较强清除能力,因此,低聚木糖具有较好的抗氧化活性。
This test mainly studied the the preparation of xylo-oligosaccharide from Chinese artichoke and its antiox-idant activity.The optimum condition of preparation of xylo-oligosaccharide from Chinese artichoke using enzymatic meth-ods by response surface method were obtained,pH for 4,enzyme concentration for 379 mol/ kg,enzymolysis temperature for 54 ℃,enzymolysis time for 94 min,and xylo-oligosaccharide content was 6.92 mg/mL at this condition,which was in-creased by 15.1% ,15.1% ,9.5% compared with the 3 control groups.And the experimental results showed that xylo- oligosaccharide had strong ability of scavenging hydroxyl free radical and superoxide anion free radical, so xylo-oligosac- charide had strong antioxidant activity.
