摘要
为探讨叶面喷硒对台茶12号茶树品种鲜叶制成红绿茶的硒含量及成茶品质的影响,通过在春秋茶季茶叶采摘前喷施不同浓度的有机态硒,考察喷施硒后茶叶中的硒含量,并对秋茶不同浓度处理的茶叶品质及生化成分进行对比。结果显示,叶面喷硒20 d后能显著提高台茶12号茶叶的含硒量,且茶叶含硒量与喷施浓度存在极显著相关性。春茶期750-2100 g/hm2的用量处理绿茶茶样含硒量可达到0.344-1.111 mg/kg,其中1650 g/hm^2的处理一次喷施后2个月内制成干茶依然可以达到富硒茶标准;秋茶期750-3000 g/hm2的用量处理绿茶茶样含硒量可达到0.276-1.106 mg/kg;春茶对硒的利用能力高于秋茶。用相同喷施处理的鲜叶加工的红茶、绿茶含硒量无显著差异;秋茶各处理制成的绿茶和红茶的感官品质均以750 g/hm^2喷硒量的处理较优,此后随着喷硒量的加大,出现茶汤苦涩、香气下降等缺点。
In order to study the effect of selenium content and quality of black tea and green tea made of Taiwan Tea 12 by foliar spray of selenium, by spraying different concentrations of organic selenium in the spring and autumn period before picking tea, the content of selenium in tea leaves was studied, and the quality and biochemical components of tea were compared with different concentrations of autumn tea. The resuhs showed that the selenium content of Taiwan Tea 12 leaves was significantly increased after spraying 20 d, and there was a significant correlation between the amount of selenium in tea leaves and the spraying concentration. The selenium content of green tea by the treatment of 750 - 2100 g/hm^2 could reach 0. 344 - 1.111 mg/kg in spring period, the selenium content of green tea could still reach the standard of rich tea within two months of the treatment 1650 g/hm^2 once after spraying; The selenium content of green tea by the treatment of 750 - 3000 g/ hm^2 could reach 0. 276 - 1. 106 mg/kg in autumn period;In spring, the utilization ability of selenium was higher than that of autumn. There was no significant difference in the amount of selenium in black tea and green tea processed by the same treatment;The sensory quality of green tea and black tea made from autumn tea was best with 750 g/hm^2 treatment, with the increase of the amount of selenium, tea soup become bitter and aroma decreased.
