马铃薯与稻米、小麦、玉米营养当量折算研究 被引量:5

摘要 目的计算马铃薯与稻米、小麦、玉米三大主粮的营养当量折算比,为我国农业生产统计提供参考依据。方法采用食物营养当量计算方法,以100g为计算单位,以18岁及以上轻体力活动成年男子膳食营养素平均需要量为参考摄入量标准,分别计算马铃薯、稻米、小麦、玉米营养当量值,并将马铃薯与稻米、小麦、玉米按照营养当量进行折算比较。结果马铃薯与稻米、小麦、玉米营养当量折算比分别为1.7:1、3.3:1、2.5:1,马铃薯与三大主粮平均营养当量折算比为2.5:1。结论马铃薯与三大主粮按照2.5:1折算较原来5:1折算更能客观反映其整体营养价值。 Objective To calculate the nutritional equivalent conversion ratio between potato and three staple foods including rice, wheat and corn, and to provide reference for agricultural production statistics in China. Methods According to the nutritional equivalent calculation methods, 100g was used as the calculation unit and the Estimated Average Requirement for adults≥ 18 years with light activity level as reference daily value. The nutritional values of potato and rice, wheat, and corn, were calculated and then their nutritional equivalent conversion ratios per unit were compared. Results The nutritional equivalent conversion ratios between potato and rice, wheat, corn were 1.7:1, 3.3:1 and 2.5:1, respectively; and the mean conversion ratio between potato and three staple foods was 2.5:1. Conclusion The conversion ratio of 2.5:1 between potato and three staple foods better reflect the true food nutritional value than the ratio of 5:1.
