摘要
湖南长沙马王堆一、三号汉墓遣册中多见"甘羹"一物,但一直都被研究者误释作"白羹"。根据北京大学藏西汉竹书中的"甘"字,同时结合其他一些相关材料可知,所谓的"白羹"应当改释作"甘羹"。"甘羹"是指用枣、栗、饴、蜜等甘物调和而成的甜羹,是研究我国早期烹饪史的宝贵资料。
"Sweet soup" is very common on the Qian Ce unearthed from the tombs of Mawangdui inHan Dynasty, but it has always been the mistaken interpretation of "white soup". According to thecharacters "sweet" on bamboo slips collected in Peking University of the Western Han Dynasty, andcombining with some other related material known, the so-called "white soup" shall be modified as "sweetsoup". "Sweet soup" is a kind of soup made with jujube, chestnut, molasses, honey, etc. This is avaluable information for the study of the early history of Chinese cooking.
