应用三维荧光光谱鉴别红酒中胭脂红色素

摘要 采用三维荧光光谱对红酒饮品中违规添加胭脂红色素进行检测。对不同浓度的胭脂红溶液以及纯红酒进行三维荧光光谱扫描,应用origin软件得到三维等高线图,结果表明胭脂红溶液有二个明显特征荧光峰,分别位于(235,450)nm与(300,450)nm,检测红酒有一个明显特征荧光峰,位于(270,375)nm;扫描添加胭脂红红酒的三维荧光光谱,比对胭脂红溶液和纯红酒的三维等高线图,结果表明添加胭脂红红酒的三维等高线的特征荧光峰包含有添加色素的特征峰信息,依此可对红酒中是否含有胭脂红色素进行判别,也为分析判定食品中是否添有合成色素提供了一种新方法。 Three-dimensional fluorescence spectrum of wine drinks add Ponceau 4R irregularities detected were studied. The solution of Ponceau 4R of different concentrations and pure red wine though the instrument LS-55 were scanned, and three-dimensional contonr plots though software origin7.5 were obtained. The results shows that the solution of Ponceau 4R have two distinct characteristic fluorescence peak at (235,450) nm, (300,450) nm and the pure red wine only has a distinct characteristic fluorescence peak at (270,375) nm. The red wine added different concentrations ofPonceau 4R were scanned and three-dimensional contour plots were obtained. Based on the comparison of three-dimensional contour plots of Ponceau 4R and red wine, the characteristic information of Ponceau 4R which shows red wine contains Ponceau 4R can be found. The results shows that synthetic pigment in red wine can be detected by the three-dimensional fluorescence spectrometry, which will provide a new method to analyze synthetic pigment in our food.
