摘要
以糊化率为指标,对山西高粱、澳大利亚高粱、内蒙古高粱的润粮条件、粉碎度、蒸粮时间分别进行了研究,确定了3种高粱的润粮工艺、粉碎度、蒸粮时间。
In this study, the technical parameters of 3 kinds of liquor-making sorghum (Shanxi sorghum, Australian sorghum and Inner Mongo- lian sorghum), including sorghum moisturizing conditions, comminution degree, and sorghum steaming time were studied respectively and the best technical conditions were summed up with gelatinization rate as the evaluating index.
