摘要
以枸杞、胡萝卜和雪梨为原料,添加抗辐射因子茶多酚,经科学调配,研制出具有抗辐射功效的果蔬保健饮品——枸杞雪梨胡萝卜复合果蔬保健饮品。研究结果表明,利用正交试验和混料设计试验,以感官评价和沉淀率为检测指标,确定抗辐射饮品的基本配方为:胡萝卜汁57.27%,枸杞汁16.09%,雪梨汁26.64%。为增强饮品功能性添加0.01%茶多酚,用5%木糖醇和0.04%柠檬酸改善口感,最后以0.14%明胶和0.16%卡拉胶维持果蔬饮品的稳定性。此工艺条件下制得的抗辐射饮品具有明亮的橙黄色,香气清新、怡人,酸甜适口、清爽,并具有一定抗辐射的保健功效。
WoKberry, carrots and sydney as raw material, adding anti-radiation factors polyphenols, through the de- ployment of science, research with anti-radiation effect of fruit and vegetable health drink wolfberry -- sydney carrot vegetable health drinks.The results showed that using orthogonal and mixture design of experiments,withevaluation in- dex and sedimentation rateas sensory evaluation,to determine the basic formula for the anti-radiation drink: carrot juice 57.27%, 16.09% medlar juice, pear juice 26.64%. To enhance the functional of drink adding 0.01% tea polyphenols ; to improve the taste adding 5% xylitol and 0.04% citric acid .Finally,to maintain the stability of fruit and vegetable drinks adding 0.14% gelatin and 0.16% carrageenan.The resulting radiation with a bright orange color,aroma pure , fresh, pleasant, sweet and sour,relaxed, and with certain anti-radiation health effects.
