摘要
目的了解福建省厦门市面制食品中铝污染的状况,为食品安全监管提供依据。方法 2006-2011年在厦门市超市/食品店、农贸市场、餐饮单位等居民主要购买点随机抽取5类面制食品,按GB/T5009.182-2003《面制食品中铝的测定》检测、按GB2760-2011《食品添加剂使用标准》进行评价。结果检测5类面制食品141份样品,超标率为43.3%;铝含量的最高检出值为882.00 mg/kg,均值为162.89 mg/kg,中位数(P50)为57.90 mg/kg;油炸类面制品和蒸制类面制品的铝含量和超标率均明显高于面条类面制品、焙烤食品和膨化食品。结论厦门市部分面制食品中存在铝污染,需要切实加强面制食品的监测与监管。
Objective To obtain the contamination status of aluminum in flour foods in Xiamen city, so as to provide the basis for further supervision. Methods The flour products in Xiamen were classified into five types, which were fried flour products, steamed flour products, noodles, bakery product and puffed food, and were sampled randomly from 2006-2011. The samples were tested according to GB/TS009. 182 -2003, and the results were evaluated according to GB2760 -2011. Results There were 141 samples of flour foods were tested, the over standard rate was 43. 3% , the highest aluminum content was 882. 00mg/kg, the average aluminum content was 162. 89mg/kg, and the median aluminum content was 57. 90 mg/kg. The content and the over standard rate of fried flour products and steamed flour products were both higher than the other three flour products. Conclusion At present, the contamination of aluminum in flour products is serious. The supervision and management need to be strengthened to reduce the aluminum content in flour foods.
