太平洋真鳕鱼卵营养成分分析与评价 被引量:5

摘要 对太平洋真鳕(Gadus macrocephalus)鱼卵的基本成分进行了系统的测定和评价分析。分析结果显示,太平洋真鳕鱼卵中,水分含量为(67.1±1.4)%;粗蛋白、粗脂肪和灰分的含量(干基)分别为(75.8±2.1)%、(14.3±0.6)%和(6.6±0.2)%;总脂中甘油三酯、胆固醇、游离脂肪酸、磷脂的含量分别为(10.0±0.06)%、(7.7±0.29)%、(11.4±0.13)%、(58.7±0.48)%。鱼卵中主要含有18种脂肪酸,多不饱和脂肪酸含量较高,含EPA10.5%、DHA 31.2%;氨基酸组成中,必需氨基酸占氨基酸总量的43.1%,谷氨酸、丙氨酸和天门冬氨酸等呈味氨基酸以及精氨酸等药效氨基酸含量较高;无机元素含量丰富,镁、锌、硒等元素含量较高。研究结果表明,太平洋真鳕鱼卵含有丰富的必需氨基酸、多不饱和脂肪酸、磷脂和镁、锌、硒等无机元素,具有较好的食用和药用价值,是一种值得深入研究和开发利用的水产原料。 The nutrient content of Gadus macrocephalus roe were analyzed in the present study.The results showed that the content of moisture was(67.1±1.4)%,while the contents(dry weight)of crude protein,crude fat and ash were(75.8±2.1)%,(14.3±0.6)%,(6.6±0.2)%,respectively.The contents of triglycerides,cholesterol,free fatty acid,and phospholipids in total lipids of G.macrocephalus roe were(10.0±0.06)%,(7.7±0.29)%,(11.4±0.13)%,(58.7±0.48)%,respectively.Eighteen kinds of fatty acids were found in G.macrocephalus roe.The content of polyunsaturated fatty acid(PUFA)was abundant,while EPA and DHA were the predominate PUFA,approximately accounting for10.5% and 31.2%,respectively.Seventeen kinds of amino acids were detected in this kind of fish roe,and essential amino acids accounted for 43.1% of total amino acids.The G.macrocephalus roe were rich in the flavor amino acids such as glutamic acid(Glu),alanine(Ala),aspartic acid(Asp)and efficacy amino acids such as arginine(Arg).Furthermore,this kind of fish roe were also rich in minerals,especially elements Mg,Zn,Se.The G.macrocephalus roe possesses good edible and medicinal value,which would be worthy of further research and utilization.
