摘要
采用纤维素酶水解提取板栗壳棕色素,研究了提取时间、温度、加酶量以及料液比对提取效果的影响。正交试验结果表明,最佳提取工艺条件为:提取温度60℃、料液比1︰20(g/m L)、加酶量1.0%、提取时间150 min。在此条件下制得的板栗壳棕色素对蛋白质和淀粉均有较强的染色性。
In this thesis, brown pigment was extracted by cellulase from chestnut shell. The influence of different reaction conditions were investigated, the result of orthogonal experiment showed that the optimum extraction conditions of extraction temperature, ratio of material to liquid, enzyme dosage, and extraction time were found to be 60 %, 1 : 20 (g/mL), 1.0%, and 150 min. The dyeability of brown pigment from chestnut shell with protein and starch was very good.
