摘要
低场核磁共振技术以其检测迅速、无损、样品需要量少等优点已在肉类科学领域得到一定的研究和应用。介绍了低场核磁共振技术的基本原理与方法,综述了低场核磁共振技术在肉品成分分析、肉类保藏及加工、肉品品质控制中的应用研究进展,并对该技术在食品加工业中的应用前景进行了展望。
The LF-NMR technology has been got some research and application in the meat science because of the advantages of rapid detection, no damage and less sample requirements. The elementary principleand method of LF-NMR technology was introduced, and the application progress of LF-NMR technology on meat composition analysis, meat preservation and processing and control of meat quality were also summarized. The application prospect of LF-NMR technology on food processing was expected.
