摘要
目的调查某大学食堂蔬菜的铅、镉含量及其存在的健康风险。方法采用微波消解法对3大类8种蔬菜样品进行处理,石墨炉原子吸收法对蔬菜中的铅、镉的含量进行测定。采用单因子污染指数法、Nemerow综合污染指数法及目标危害系数法等方法对含量测定结果进行评价。结果三类蔬菜中受重金属污染程度高低顺序为:茄果类>叶菜类>薯类;重金属污染程度:铅>镉;目标危害系数(THQ):铅>镉。结论不考虑其他摄入途径等因素的共同影响,本次调查的8种蔬菜中的铅、镉的含量水平具有一定程度的健康风险,其中铅的健康风险高于镉。
Objective To investigate the contents of Pb and Cd of vegetables in a university canteen and evaluate the health risks. Methods Microwave digestion was adopted for eight kinds of three categories vegetables,and the graphite furnace atomic absorption spectrometry was adopted to determine the contents of Pb and Cd. Methods of Single Factor Pollution index,NemerowComprehensive Pollution Index and Target Damage Coefficient were used to evaluate the health risks. Results The polluted level of three kinds of vegetables by heavy metals was in this order: salanaceous fruit vegetables leaf vegetables potato vegetables;The polluted level of Pb was more than Cd; The Target Hazard Quotient( THQ) : Pb Cd. Conclusions For the levels of Pb and Cd in 8 kinds of vegetables,without considering the influence of other consumption ways,there is a certain degree of risks. The health risks of Pb are higher than the health risks of Cd.
