摘要
在单因素试验的基础上,通过正交试验优化了蛹虫草紫薯曲奇饼干的配方。结果表明,曲奇饼干的最佳配方为:低筋面粉100 g,紫薯粉添加量15 g,蛹虫草粉添加量6 g,绵白糖添加量50 g,黄油添加量70 g,鸡蛋添加量25 g,制得的产品色泽呈淡褐色,甜度适中,组织细腻。
On the basis of single factor experiment,the formula of Cordyceps militaris purple potato cookies was optimized by the orthogonal experiment.Results showed that,the optimum formula was as follows:low-gluten flour100 g,purple potato powder 15 g,Cordyceps militaris powder 6 g,soft sugar 50 g,butter 70 g,and egg 25 g.The product showed yellowish-brown color,moderate sweetness and delicate organization.
