摘要 目的了解张掖市市售食品微生物指标污染状况,初步确定可能被污染的食品,为食品卫生监督部门提供科学有效的监管依据。方法依据《2014年食源性致病菌监测工作手册》提供的标准方法进行检测,并按国家卫生标准进行结果判定。结果共监测了312件样品,检出致病菌41株,总检出率为13.14%(41/312)。其中检出沙门氏菌1株,检出率0.32%(1/312);单核细胞增生李斯特氏菌5株,检出率为1.98%(5/252);金黄色葡萄球菌12株,检出率为3.85%(12/312);蜡样芽孢杆菌7株,检出率为11.67%(7/60);大肠埃希氏菌O157 16株,检出率为9.76%(16/164);阪崎肠杆菌和志贺氏菌未检出。结论张掖市市售凉拌菜,凉拌米面制品、熟肉制品及非发酵豆制品食源性致病菌污染较严重,由金黄色葡萄球菌、蜡样芽孢杆菌和单核细胞李斯特菌导致食源性疾病的风险较高。 Objective To understand the contamination status of foodborne pathogens in food from zhangye markets,and preliminary determined potentially contaminated food.Methods According to Workbook for foodborne pathogen monitoring in 2014,and results in accordance with national health standards.Results A total of 312 food samples were tested.41 bacteria strains were isolated,the overall detection rate was 13.14%(41/312).The detection rate of Salmonella,Listeria monocytogenes,Staphylococcus aureus,Bacillus cereus,E.coli O157,was 0.32%(1/312),1.98%(5/252),3.85%(12/312),11.67%(7/60),9.76%(16/164)separately.Conclusion The situation of some food contaminated by foodborne pothogens,such as rice,ready-to-eat aquatic product and non-fermented bean products,was serious relatively in Zhangye markets,and the higher risk human foodborne disease may becaused by Salmonella,Listeria monocytogenes,Staphylococcus aureus,Bacillus cereus and E.coli O157.
