摘要
花生含有丰富的蛋白质、脂肪、维生素、矿物质等营养成分,把花生添加到火腿肠中开发出新产品,有利于丰富我国肉制品的种类、实现产品差异化、扩大花生的应用范围。本实验对火腿肠中添加花生进行了研究,经单因素和正交试验确定花生火腿肠的最佳配方:猪肉55%(肥瘦比3∶7),花生碎粒8%,大豆蛋白5%,玉米淀粉8%,卡拉胶0.5%,复合磷酸盐0.5%,食盐2.5%,香辛料1%,味精0.3%,白糖2%,红曲红色素0.05%,冰水18%。
Peanut is rich in protein,fat,vitamins,minerals and other nutrients.Adding peanut to ham sausage is benefit to develop new products,enrich the types of meat products in China,and to achieve product differentiation as well as extension of the application scope of peanut.Adding peanut to the ham was studied with single factor and orthogonal experiments to determine the optimum formula of peanut sausage,which resulted as pork 55%(fat and lean meat ratio 3∶7),8% crushed peanut,soybean protein 5%,corn starch 8%,carrageenan 0.5%,compound phosphate 0.5%,salt 2.5%,spice 1%,monosodium glutamate 0.3%,sugar 2%,red pigment 0.05%,and ice water 18%.
