摘要
为比较几种植物提取物在不同检测系统中的抗氧化活性差异,采用ABTS法、FRAP法、β-胡萝卜素漂白法、鱼油氧化体系中的TBARS法以及对总酚含量的测定,评估了松树皮、葡萄籽、绿茶、蓝莓和苹果提取物的抗氧化活性.结果发现,无论是总酚含量,还是单一因素清除测得的抗氧化性活性(ABTS法,FRAP法),与在复杂的脂肪酸或真实食品体系中生成的氧化产物(β-胡萝卜素漂白法,TBARS法)的抑制能力的相关性较差.因此,植物提取物的抗氧化活性需要结合不同的检测方法进行综合评价.
In this paper, antioxidant activities of selected plant extracts in different testing systems are studied. ABTS assay, FRAP assay, β-carotene bleaching assay, TBARS assay in fish oil oxidation system as well as total phenolic contents are all employed to evaluate the antioxidant activities of pine bark, grape seed, green tea, blueberry, and apple extracts. The results show that antioxidant activities obtained by simple radical scavenging assay (ABTS and FRAP assay) have poor correlation with the inhibition ability of the oxidation products obtained in complex fatty acid or real food system (β-carotene bleaching assay and TBARS assay). Therefore, the antioxidant activities of plant extracts need different tests to be analyzed.
