摘要
近几年来,中国的乳品安全事件屡屡发生,在所发生的乳品安全事件中,绝大多数都是由于污染致病菌引起的大规模乳品中毒事件。在乳品中较为常见的病原菌检测品种有沙门氏菌、金黄色葡萄球菌、大肠杆菌、空肠弯曲菌等。本研究从食品安全的角度出发,较为系统地介绍了乳品中主要的高危害致病菌以及当前乳品中有害微生物的检测方法、乳品中微生物检测技术的发展方向。
In recent years, China's dairy safety incidents occurred frequently, the vast majority of which are caused by large-scale dairy poisoning incidents due to pathogenic bacteria. Common pathogenic bacteria in dairy are salmonella, staphylococcus aureus, escherichia coli and campylobacter jejuni. The study from the perspective of food security, made a systematic introduction of the major high hazard dairy pathogens and the development direction of current detection methods of harmful microorganisms.
