摘要
巴沙鲶鱼油由于其特殊的脂肪酸组成及分布是制备人乳替代脂的良好原料。根据巴沙鲶鱼油同人乳脂肪在化学组成上的差异,首先选择芝麻油脂肪酸为酰基供体,以LipozymeRM IM为催化剂,通过在填充床反应器中酸解巴沙鲶鱼油,初步调节巴沙鲶鱼油中的棕榈酸、亚油酸含量及sn-2位棕榈酸相对含量,提高巴沙鲶鱼油同人乳脂肪的相似性,酶法酸解反应的最优条件为:底物摩尔比1∶3(巴沙鲶鱼油与脂肪酸比),停留时间1 h,反应温度50℃。其次,通过模型指导下的油脂混合,调节酶法酸解产物的中碳链脂肪酸及长碳链多不饱和脂肪酸,从而进一步提高产品在脂肪酸组成及分布上同人乳脂肪的相似性,油脂混合的条件为:酶法酸解产物与棕榈仁油、亚麻籽油、微生物油脂、藻油摩尔比为1∶0.1∶0.07∶0.007∶0.006。
Basa catfish oil is a good raw material for preparation of human milk fat substitutes due to its special fatty acid composition and distribution. According to the differences between the chemical compositions of basa catfish oil and human milk fat, the contents of palmitic acid and linoleic acid, and the relative content of palmitic acid in the sn - 2 position were adjusted by LipozymeRM IM - catalyzed acidolysis of basa catfish oil with fatty acids from sesame oil as acyl donor in a packed - bed reactor to increase the similarity to human milk fat. The optimal enzymatic acidolysis conditions were obtained as follows: molar ratio of basa catfish oil to sesame oil fatty acids 1: 3, residence time 1 h, reaction temperature 50℃. To further increase the similarity of the product to human milk fat in fatty acid composition and distribution, the contents of medium chain fatty acids and long chain polyunsaturated fatty acids were adjusted by blending the acidolyzed products with other selected oils, and the ratio was optimized by the blending model as follows: molar ratio of acidolyzed product to palm kernel oil, linseed oil, microbial oil and algae oil 1 : 0. 1 : 0. 07: 0. 007: 0. 006.
