摘要
以淡竹叶、蒲公英等中草药为原料,应用响应面分析法研究该凉茶黄酮最佳提取工艺、运用模糊评价法和正交实验研究最佳配方并用DPPH法、FRAP法考察该凉茶及市面上其他5种凉茶的体外抗氧化活性,并对黄酮含量与抗氧化方法的相关性进行研究。结果表明,优化后的黄酮最佳浸提条件为:浸提时间75min,浸提温度81℃,液料比27∶1,得到的黄酮提取率为2.01%;最佳配方组合为蔗糖添加量5%,柠檬酸添加量1.0%,β-CD添加量1.0%。该凉茶DPPH自由基清除率达到48.6%,FRAP还原能力为7479.5μmol Fe2+/m L,优于市面上常见凉茶。六种凉茶黄酮含量与DPPH自由基清除率和FRAP值相关系数r分别为0.798(P<0.01),0.891(P<0.01),证明了黄酮与凉茶抗氧化有一定的相关性。
Lophatherum gracile,dandelion and other herbs were used as raw materials,The optimal flavone extraction of herbal tea is developed by response surface methodology. Best formula of herbal tea is studied by fuzzy evaluation method and orthogonal experiments. Lophatherum gracile tea and other 5 kinds of herbal tea purchased from the market were assessed for their DPPH radical scavenging activity and Fe3+ reducing power. The results showed that the optimum extraction conditions of flavonoids optimized as follows: extraction time 75min,extraction temperature 81℃, liquid ratio 27∶1 and Extraction rate of flavonoids of 2.01%;The best combination of sucrose formula was shown as follows:the sugar 5%,citric acid 1.0% andβ-CD 1.0%. Lophatherum gracile tea DPPH radical scavenging rate was 48.6%. FRAP reducing power was 7479.5μmol Fe2 +/mL. Lophatherum gracile tea showed a better antioxidant activity among the studying herbal teas. Six kinds of herbal tea flavonoid content and DPPH radical scavenging and FRAP value of the correlation coefficient r were 0.798(P〈0.01),0.891(P〈0.01),respectively,proving that the antioxidant flavonoids and herbal tea have some relevance.
