摘要
以脱脂米糠为原料,研究复合酶法提取米糠蛋白的最佳工艺条件,筛选复合酶的添加比例,采用正交试验研究料液比、提取时间、提取温度、复合酶添加量各因素及其相互作用对米糠蛋白得率的影响。结果表明,复合酶添加的最佳质量比为纤维素酶∶木瓜蛋白酶为7∶3。正交试验优化结果表明,复合酶法提取米糠蛋白的最佳条件为料液比1∶10,提取时间2 h,提取温度55℃,复合酶添加量4%,在此条件下米糠蛋白得率为76.75%。
In order to obtain the optimal extraction condition for rice bran protein from defatted rice bran by cellulase and papain, the optimization ratio of them is selected. The orthogonal array experiment is used to explore the effect of solid- to-liquid ratio, extraction time, extraction temperature and mixed enzymes addition as well as their interactions on the yield of rice bran protein. The results indicate that the cellelase to papain radio is 7 : 3 ; the results of the orthogonal array experiments are as follows: 1 : 10, 2 h, 55 ℃, 4%. Under these conditions, the yield office bran protein is 76.75%.
