摘要
系水力是肉类品质的重要指标之一,为寻找快速简便测定鲜肉系水力方法,以新宰杀猪的前槽、后鞧、里脊、五花肉为试验材料,使用质构仪进行应力松弛特性试验,获得试样应力松弛试验数据;基于广义Maxwell流变模型进行Matlab非线性拟合分析,得到各部分试样材料的流变特性参数。结果表明,鲜猪肉具有良好的压缩黏弹性力学性质,属黏弹性材料;三单元广义Maxwell模型适用于模拟鲜猪肉的应力松弛现象,拟合效果良好,拟合相关系数R2均达到0.95以上。对所得流变特性参数与采用常规压力法测定的系水力数据进行回归分析,获得鲜猪肉的系水力与其应力松弛特性参数相关关系,所得回归方程(R2>0.90)对系水力的预测和快速测定具有一定应用价值。
The water holding capacity was one of the important indexes of meat quality, in order to find a simple rapid method for determination the water holding capacity of fresh meat, with pork before slots, the leather strap on flanks of horse, pork loin, streaky pork of new slaughter pigs as the sample material, using the substance for the stress relaxation characteristics test, the stress relaxation test sample data obtained. Based on generalized Maxwell rheological model on matlab nonlinear fitting analysis, obtained sample material the rheological characteristic parameters of each part. The results showed that the fresh pork with good compression viscoelasticity mechanics properties, belongs to the viscoelastic material: three unit of generalized Maxwell model is used to simulate the fresh pork stress relaxation phenomenon, the fitting effect is good, the fitting correlation coefficients R= were more than 0.95. For the rheological characteristics parameters and the water holding capacity data of the conventional pressure determination regression analysis get the water holding capacity of the fresh pork and its stress relaxation properties of correlation, regression equations (R2〉0.90) for forecasting the water holding capacity and rapid determination has certain significance.
