攀枝花市市售食品中金黄色葡萄球菌污染状况调查 被引量:11

Survey about the pollution status of Staphylococcus aureus in commercially available food of Panzhihua City

摘要 目的了解攀枝花市市场出售的食品中金黄色葡萄球菌(SA)污染状况,为预防和控制食源性疾病提供依据。方法采用随机抽样的方法,对2010—2013年采集该市场出售的熟肉制品、米面制品、蛋制品等数种直接入口的食品样本检测SA的结果进行分析。结果共检测食品11类771份,检出SA36株,总检出率4.67%。各类食品中,SA检出率依次为米粉及制品、盒饭(10.47%)、熟肉制品(7.34%)、糕点(4.62%)、速冻面米制品(3.84%)、凉拌菜(3.16%)、果汁(3.13%)、蛋制品(2.94%)、冰激凌(2.13%);散装食品SA检出率为5.88%,明显高于定性包装食品的1.43%;农贸市场抽检食品中SA检出率高达7.14%,超市食品中检出率最低(1.67%);5个区县中,西区SA检出率(14.29%)明显高于其他区县。农村SA检出率为5.67%,与城市的3.28%比较,差异无统计学意义。结论攀枝花市市售食品中SA污染较严重,应加强食品卫生监管,预防食源性疾病的发生。 [Objective]To understand the pollution status of Staphylococcus aureus(SA) in commercially available food of Panzhihua City,and provide scientific basis for prevention and control of food borne diseases. [Methods]By using the method of random sampling,from 2010-2013 the samples of market sold cooked meat products,rice and flour products,egg products and several kinds of directly eating food were collected for SA detection,the results were analyzed.[Results]A total of 11 kinds of 771 food samples were detected,SA36 strains were identified,with the total positive rate of 4.67%. Of these kinds of food,the detection rate of SA from high to low were rice noodles and its products,box lunch(10.47%),cooked meat products(7.34%),cake(4.62%),quick-frozen rice noodle products(3.84%),cold dishes(3.16%),fruit juice(3.13%),and egg products(2.94%),ice cream(2.13%). The SA detection rate of food in bulk was 5.88%,obviously higher than 1.43% of packaged food.The SA detection rate of food samples from farmers market was 7.14%,that in supermarket was 1.67%(minimum). Of all 5districts and counties,the SA detection rate in western districts(14.29%) was obviously higher than other districts. Rural SA detection rate(5.67%) was not significantly different with urban(3.28%).[Conclusion]SA pollution is serious in market sold food of Panzhihua City. It is necessary to strengthen food hygiene supervision to prevent foodborne diseases.
