摘要
对于蛋白膜的稳定性研究,多数是将玉米醇溶蛋白膜放置在恒温恒湿的环境中储藏,测定其在储藏期间的机械性能的变化,评价膜的稳定性。这种方法有利于从理论上探讨膜的变化趋势和机理,但和蛋白膜的实际应用的环境不一致。在不同季节的自然环境条件下对玉米醇溶蛋白膜的储藏稳定性进行研究,发现春季储藏的蛋白膜的抗拉强度的变化趋势和其它三季有较大的区别,秋季储藏过程中蛋白膜的断裂延伸率的变化趋势和其它三季有很大的差别。因此,蛋白膜所处的环境对其机械性能具有明显的影响,特别是环境的温度和湿度。
Most of all researches about the stability of protein film was that laid the film in constant temperature and humidity, determined the mechanical properties during storage, and remaked the film stability. It wasconducive to research the variation tendency and mechanism of film mechanical properties, but it did not fit the real environment. In this paper, stability of zein film at natural environment in four seasons was studied. The result showed that the tensile strength (TS) change trend in spring was different with other seasons, and elongation at break (EB) change trend in autumn was different with other seasons. The film stability was effected bviously by storage environmental conditons, especially temperature and humidity.
