摘要
潮菜是广东菜三大流派之一,是中国最精贵的一个菜系。本文将就国内外餐饮业标准体系建设情况、潮菜的发展及其瓶颈、潮菜标准体系的意义进行研究,提出潮菜标准体系构建思路。
Chiu Chow is one of the Three Cantonese cuisines, and one of the most exclusive cuisines. This paper reseaches the standards system situation of catering industry, the development and the bottle-neck of the Chui Chow, and the significance of the standards system of Chui Chow, and puts forward the thought to construct the standards system for Chui Chow.
