Analysis of nut quality of ‘Xiangling' walnut

摘要 对山东省泰安地区‘香玲’核桃园进行抽样,分析其坚果品质。结果表明:‘香玲’核桃坚果外形美观,单果重11.77g,壳薄(0.95mm),易取全仁,出仁率58.52%。种仁蛋白质、粗脂肪、可溶性糖和相对水分含量分别为21.14、67.69、5.06和3.30g/100g。种仁含17种氨基酸,氨基酸总量为19.33g/100g,谷氨酸、精氨酸和天冬氨酸含量较高,分别为4.13、2.26和20.5g/100g。种仁含10种脂肪酸,亚油酸含量最高(64.17%),其次是油酸(17.43%)。种仁中钾、钙、镁、铁、锰、锌和铜含量分别为122.24、25.37、54.64、2.26、3.70、2.94和0.76mg/100g。‘香玲’核桃坚果表型特征稳定性高,种仁营养丰富,具有较高的商品经济价值,适合在其适栽地区推广种植,这为杂交育种中亲本选择和生产中进行高效栽培管理,提高产量和品质提供理论依据。 ‘Xiangling' walnut sampled from Tai'an Shandong province were used as experimental materials to analyze its appearance characteristics, and the main nutrients composition (including protein, fat, amino acid, fatty acid, carbohydrate and mineral elements) and its content in kernel. The results showed that:'Xiangling' walnut had beautiful appearance, close and flat suture line, and thin shell (0.95 mm) ; the fruit weight and kernel rate was 11.77 g and 58.52 %, respectively. The con- tent of protein, fat, soluble sugar, and relative water in kernel of 'Xiangling' walnut was 21.14, 67.69, 5.06, and 3.30 g/ 100g, respectively. Seventeen amino acid were determined in kernel of 'Xiangling' walnut, the content of total amino acid was 19.33 g/100g, glutamate, arginine, and aspartic acid had the higher content that was 4.13.2.26, and 20.5 g/100g, respec- tively. Ten kinds of fatty acid were obversed in kernel of 'Xiangling' walnut, including of which linoleic acid and oleic acid had the higher content which was 64. 17% and 17. 43%, respectively. The content of potassium, calcium, magnesium, iron, manganese, zinc and copper was 122.24, 25.37, 54.64, 2.26, 3.70, 2.94, and 0.76 mg/100g. In conclusion, 'Xiangling' walnut had high stability of nut phenotypic characteristics and rich nutrition of kernel, that make it has high value of commodity economy and can be widely planted in its suitable planting area. Furthermore, it could provide theoretical basis for the selection of parents in hybridized breeding and for the selection of efficient cultivation managements that could improve yield and quality in production.
