摘要
米糠油是一种营养价值极高的植物油。由于米糠中含活性很强的脂肪酶,使得毛米糠油的酸值很高。脱酸工序对米糠油中的营养成分的保留起着决定性的作用。该文详细介绍了国内外米糠油现有的脱酸工艺,并进行了分析比较,以期为米糠油脱酸的研究提供依据。
Rice bran oil is a kind of high nutritional value vegetable oil. Because of strong activity of lipase in the rice bran, the acid value of crude rice bran oil is very high. Deacidification of the rice bran oil has a decisive impact of retention nutrients. Deacidifications of rice bran oil at home and abroad were introduced and carried on the analysis comparison in this paper. That could provide a basis for the research on deacidification of the rice bran oil.
