延边黄牛和延黄牛脂肪组织FASN基因mRNA表达水平与肉质的关系 被引量:4

mRNA Expression Levels of FASN Gene in Various Adipose Tissues from Yanbian Yellow Cattle and Yanhuang Cattle and Its Association with Meat Quality

摘要 为了探讨不同品种牛不同脂肪沉积部位FASN基因mRNA表达水平与肉质的关系,采用荧光定量PCR技术检测延边黄牛和延黄牛皮下脂肪、腹部脂肪、肾周脂肪与其他器官的FASN基因mRNA表达水平。结果表明,2个牛品种的FASN基因mRNA在不同脂肪组织中表达量均高于背最长肌,而延黄牛皮下脂肪和腹部脂肪中FASN基因mRNA表达量都高于延边黄牛。通过对肺、小肠、肾脏、肝脏和心脏中FASN基因mRNA研究发现,延边黄牛和延黄牛肺中FASN基因mRNA的表达量高于其他脏器。由此可见,FASN是影响脂肪酸合成的关键酶,与肉质相关,其中皮下脂肪和腹部脂肪是脂肪酸合成的主要部位。 The objective of this study was to investigate the correlation between cattle breed and deposit of adipose tissues in different position and the mRNA expressions levels of fatty acid synthase ( FASN), which are associated with meat quality. To undemtand this difference, the expression of FASN in different adipose tissues in these two breeds were analyzed using Real - time quantitative polymerase chain reaction method. The result showed that FASN mRNA expression levels was significantly higher in adipose tissue than in LD in both breeds. On the other hand, FASN mRNA expression levels in subcutaneous fat and abdominal fat in Yanhuang cattle were significantly higher than that in Yanbian yellow cattle. Furthermore, the mRNA expression levels of FASN gene in lung, colon, kidney, liver, heart of Yanbian yellow cattle and Yanhuang cattle were also investigated. The results showed that the highest mRNA expression levels of FASN gene were detected in the lung in both breeds. FASN as a critical enzyme in biosynthesis of fatty acids is associated with meat quality, subcutaneous fat and abdominal fat is a critical part in biosynthesis of fatty acids.
