红鳙鱼和黑鳙鱼肌肉营养成分的分析与比较 被引量:19

ANALYSIS AND COMPARISON OF NUTRITIONAL COMPONENTS IN MUSCLE OF RED AND BLACK ARISTICHTHYS NOBILIS

摘要 分析测试了人工养殖的红鳙鱼和黑鳙鱼肌肉的p H、失水率、熟肉率及营养成分,比较分析了它们肌肉的p H、失水率、熟肉率、水分、灰分、粗蛋白、粗脂肪以及氨基酸、脂肪酸和矿物质.结果表明,红鳙鱼的p H、失水率、熟肉率、水分和粗蛋白都略高于黑鳙鱼,脂肪和灰分含量略低于黑鳙鱼;红鳙鱼和黑鳙鱼鱼肉的氨基酸组成基本一致,均含有17种氨基酸(除色氨酸),总量分别占鱼肉鲜样的15.28%和15.15%,其中7种必需氨基酸(除色氨酸)含量分别为5.780%和5.688%,必需氨基酸占总氨基酸的比值分别为37.83%和37.54%,氨基酸指数分别为67.74和65.64,红鳙鱼的营养价值略高于黑鳙鱼;脂肪酸组成中,红鳙鱼含有C20∶1和C20∶2两类脂肪酸,而黑鳙鱼不含有;在微量元素锌、铜和铁的比值上,红鳙鱼略比黑鳙鱼合理. We determined the p H,water loss rate,cooked meat percentage,and nutritional components in the muscles of cultured red and black Aristichthys nobilis,analyzed and compared the p H,water loss rate,cooked meat percentage,and the contents of moisture,ash,crude protein,crude fat,amino acids,fatty acids and minerals in the muscles. Results showed that the p H,water loss rate,cooked meat percentage,moisture content and crude protein content of red Aristichthys nobilis were slightly higher than those of black Aristichthys nobilis,but fat content and ash content were slightly lower than those of black Aristichthys nobilis;the compositions of amino acids in the muscles of red and black Aristichthys nobilis were substantially uniform;the muscles of both the red and black Aristichthys nobilis contained 17 amino acids,which accounted for 15.28% and 15.15% of fresh fish meat and included 7 essential amino acids(5.780% and 5.688%)(except for tryptophan);the essential amino acids accounted for 37.83% and 37.54% the total amino acids;the amino acid indexes of the red and black Aristichthys nobilis were 67.74 and 65.64,respectively,so that the nutritional value of the red Aristichthys nobilis was slightly higher than that of the black Aristichthys nobilis. In fatty acid compositions,the red Aristichthys nobilis contained C20:1 and C20:2 fatty acids,which were absent from the black Aristichthys nobilis;and the red Aristichthys nobilis was more reasonable in the ratio of microelements(Zn,Cu and Fe) than the black Aristichthys nobilis.
