Analysis on Nutrient Quality at Different Ages of Yili Horse

摘要 【目的】对不同年龄段伊犁马肉常规营养成分进行测定,分析年龄对伊犁马肉营养品质的影响。【方法】采集不同年龄段伊犁马肉样品,在实验室测定主要营养成分(蛋白质、肌内脂肪、水分、灰分),并将所得数据进行差异性检测分析。【结果】1~2岁年龄段与另外两组间伊犁马背最长肌和腰大肌水分、蛋白质、水/蛋白质值及能量等指标存在极显著差异(P〈0.01),而灰分则无显著差异性(P〉0.05)。背最长肌中肌内脂肪含量无显著差异性(P〉0.05),1~2岁年龄段与5~6岁年龄段之间腰大肌呈显著差异性(P〈0.05),而3~4岁年龄段与另外两组间差异性不显著(P〉0.05);5~6岁年龄段与另外两组间颈部肌肉中水分含量差异性显著(P〈0.05);1~2岁年龄段与另外两组间灰分和蛋白质差异性极显著(P〈0.01),而肌内脂肪则无显著差异(P〉0.05)。【结论】不同年龄段伊犁马肉营养价值具有一定的差异性,从人体营养需求的角度来看,5~6岁年龄段伊犁马肉品具有较好的营养价值。 【Objective】The purpose of this project aims to determination the conventional nutrients in horseflesh and analysis of the effects on nutritional quality at different age of Yili horse. 【Method】Collection of the samples of horseflesh at different age of Yili horse and determination of the major nutrients( protein,intramuscular fat,moisture and ash content) and analysis of the data obtained by differential analysis.【Result】Water,protein,Water / Protein ratio and energy in Longissimus Dorsi and Psoas Major were significantly different between 1 to 2 year- old group and other two groups( P 0. 01),no statistically significant differences in ash content were recorded between 1 to 2 year- old group and other two groups( P 0. 05). No statistically significant differences in fat content in Longissimus Dorsi were recorded in all groups( P 0. 05),fat content in Psoas Major was significantly different between 1 to 2 year- old group and 5 to 6 year- old groups( P 0. 05),no statistically significant differences in fat content were recorded between 3 to 4 year- old group andother two groups( P 0. 05). Moisture content in Neck Muscle was significantly different between 5 to 6 year- old group and other two groups( P 0. 05). Ash content and protein in muscle were significantly different between 1 to 2 year- old group and other two groups( P 0. 01),no statistically significant differences in fat content were recorded between 1 to 2 year- old group and other two groups( P 0. 05). 【Conclusion 】Horseflesh nutritional value had otherness at different age of Yili horse. From the perspective of human nutrition requirement,horseflesh had preferable nutritional value at 5 to 6 years old horses.
