摘要 双果糖酐Ⅲ是近年来发现的一种新型天然功能性甜味剂,具有能量值较低,在消化系统不被消化,防止龋齿,促进人体吸收矿物质,增进有益菌群生长繁殖,降低胆固醇,防治糖尿病、高血压等多种生理功能,可以应用到焙烤食品、饮料、糖果中,还可用于低能量食品及糖尿病人食品中。目前制备方法主要采用生物催化法,该方法具有原料来源广泛且价格低廉,转化率高,适于工业化生产的优点。日本甜菜制药株式会社和日本Fancl公司已经实现双果糖酐Ⅲ的工业化生产,国内还处于研究阶段。目前市面上销售的双果糖酐Ⅲ产品主要是日本Fancl公司的促进矿物质吸收的保健食品。本文主要介绍了双果糖酐Ⅲ的理化性质、生理功能、制备方法以及国内外的发展动向。 Difructose anhydride (DFA Ⅲ) is a newly found natural functional sweetener. It has many physiological functions, such as low energy, not being digested by the digestive system, preventing tooth decay, improving the absorption of minerals, promoting the beneficial bacteria population growth and reproduction, reducing cholesterol, preventing diabetes mellitus, hypertension, and etc. So it has been applied in bakery, beverage, candy and low energy food and diabetic food. Enzymatic method is widely used for the abandance sources of substrate inulin, low price, high conversion rate, and feasible in industry production. Nippon beet Pharmaceutical Co. Ltd. and Japan Fancl Company has produced difructose anhydride Ⅲ in large scale, while the preparation of DFA III is still in a research stage. This paper mainly introduced the physicochemical properties, physiological functions, preparation method and trends of industrial production of difructose anhydride Ⅲ.
