摘要 据市场调查信息反馈,杜仲山茱萸保健酒澄清度不够高,光照下有散射光点,静置3个月以上易产生沉淀.通过单因素和正交试验优化杜仲山茱萸保健酒的澄清工艺.试验结果表明,当活性炭和JA澄清剂的添加量分别为1.00g/L、0.20g/L,澄清时间为30天,再经硅藻土(300#:100#=0.8:1)过滤机过滤,酒体透光率最高,达96.73%.澄清后,该保健酒酒度变化较小,皂苷、总糖等营养物质含量基本不变,且口感爽快醇和. By the market survey reflected,the health wine of Eucommia ulmoides-Dogwood ’s clarify degree is not high enough,when under the sunshine,there are some scattered light spot in the wine,stand for 3 months or longer,the wine is likely to precipitate. Optimized Eucommia ulmoides-Dogwood health wine’s clarification process by single factor and orthogonal experiment. The experimental results showed that,when the adsorptions of activated carbon and JA clarifying agent were 1.0g/L,0. 20 g/L;then clarified for 30 days. Finally filtrated it by the diatomaceous earth (300# ∶ 100 #= 0. 8 ∶ 1)filter,the light transmittance of wine was highest,achieved 96. 73%. After clarified,the wine’s alcohol had small changed,other nutrients content such as saponin, total sugar were basically remained unchanged,and taste clearly and mellow.
