摘要
综述了检测食品中亚硝酸盐方法的研究进展,同时分析比较各方法的优劣及应用前景,对检测食品中亚硝酸盐具有参考意义,检测时可根据不同场合选择适合的方法。
Nitrite is applied in food processing as food additive for a long time. With frequent accidents of food safety ,the issues about the range of nitrite contents in food which is safe for eating receives are much concerned. Research progress in detection methods of nitrite is discussed in this study. At the same time, the advantages and disadvantages of each method are compared. The application prospect is also proposed. It provides a reference for the researchers to detect nitrite in food.
