摘要
米糠是稻谷加工的主要副产物,是一种具有高附加值的可再生资源,被誉为"天赐的营养源"。目前我国米糠资源的开发和利用与国外仍有一定的差距。从米糠油、米糠蛋白、米糠纤维等方面,综述了米糠在我国的利用现状,分析了米糠各个成分的营养价值和提取工艺,并展望了其应用发展前景。
Rice bran is the major byproducts of rice processing, known as providential source of nutrition and it's a high value renewable resource.There is still some disparity between China and overseas on the development and utilization of rice resources. The status of the utilization of rice bran resource is summarized from rice bran oil,rice bran protein and rice bran fiber. The nutritional value and extraction process of the rice bran components are analyzed and look forward to the application and development of rice bran in the future. This paper aims at the use of rice bran resource.
