摘要
β-樱草糖苷酶属于水解酶类,特异性水解β-樱草糖苷,其生成物对茶树(Camellia sinensis)香气和防御体系起到很大的作用。本文综述了β-樱草糖苷酶的酶学特性、提取纯化方法、活性测定方法、分子生物学特性的研究进展,并展望了β-樱草糖苷酶的应用前景。
β-primeverosidase belongs hydrolases, it can specifically hydrolysis β-primeveroside, and its generation is very important in the aroma and defense systems of tea (Camellia sinensis).The research progress in β-primeverosidase were summarized,including its enzymatic property,its separation and purification methods, its activity determination method and its molecular biological characteristics.The applications prospects of β-primeverosidase were also analyzed.
