摘要
目的对福建省藻类中的铝含量进行调查研究,并分析藻类中铝的形态,对藻类中铝的食用安全性进行分析。方法抽查了福建省区域的150个藻类样品,用ICP-MS测定藻类中的总铝含量,同时用连续提取与ICP-MS结合的方法对藻类中铝的形态进行分析,通过模拟胃肠消化环境测定藻类中铝的溶出量。结果藻类中的总铝含量范围为52 mg/kg^1797 mg/kg,藻类中稳定态有机铝占总铝的74%~83%,模拟胃液中可溶出铝占总铝的3.2%~11.4%。结论藻类的总铝超过100 mg/kg,约占81%,但藻类中的铝主要是以稳定态有机铝的形态存在,在人体中不易溶出。
Objective To investigate the aluminum content in algae, and analyze the species of aluminum and evaluate the edi- ble safety of aluminum in algae. Methods Examined 150 algae samples in Fujian area, using icp - ms to determining the total aluminum content of algae. At the same time the continuous extraction combined with icp - ms analysis species of aluminum in algae, and through the simulated conditions of gastrointestinal digestion determines the percentage of dissolved aluminium in al- gae products. Results Total aluminum content in the algae ranges 52 mg/kg to 1 797 mg/kg, the stable state organic aluminum in algae accounts for 74% -83%, the soluble aluminum in simulated gastric juice accounts for 3.2% - 11.4%. Conclu- sion About 81% algae of the aluminum content exceeds 100 mg/kg. Most of aluminum in algae is stable state organic alumi- num and not easy dissolution during digestion process.
