利用蛋白质组学技术研究益生菌酸耐受应答过程中相关蛋白的变化

摘要 在发酵乳制品或消化道的酸性环境中,益生菌会产生酸耐受应答,进而发生代谢变化。蛋白质组学技术可以让人们更好地了解这些变化,深入揭示益生菌的酸耐受机制。本文就益生菌酸耐受应答过程中的蛋白质组学技术应用进展进行综述。 Probiotics evolve acid tolerance response in the acidic environment, such as in fermented dairy prod- ucts or in the gastrointestinal tract, resulting in changes in their metabolism. Proteomics technique is a useful tool to analyze a wealth of important information for further understanding of the changes in probiotics metabo- lism and revealing the acid tolerance mechanisms deeply. In this paper, the research progress of the changes of related proteins in procession of probiotics acid tolerance response using proteomics technique was reviewed.
