水产品中亚硫酸盐测定方法及检测结果分析 被引量:1

Analysis of determination methods and results of sulfite in aquatic products

摘要 目的探究盐酸副玫瑰苯胺法测定水产品中亚硫酸盐的最佳处理条件,了解舟山市水产加工品中亚硫酸盐残留状况。方法以不同的水产品为研究对象,比较不同的浸泡液、浸泡时间、显色温度和时间对亚硫酸盐测定结果的影响;采用盐酸副玫瑰苯胺法的最佳处理条件,对2010年-2012年连续3年舟山市共5 258例各类水产品,进行了亚硫酸盐残留检测。结果四氯汞钠提取效果高于甲醛、水、已二胺四乙酸二钠等,且盐酸副玫瑰苯胺的显色时间和稳定性随温度变化。亚硫酸盐在水产品保鲜中的应用普遍存在,尤其是虾类及其制品。不同水产品中亚硫酸盐的检出率4.7%~90.9%,其残留量差异较大,最大残留量达到558 mg/kg。结论舟山市水产品存在亚硫酸盐残留情况且部分类别产品超标,需引起消费者及有关监管部门的重视。 Objective To study the optimal condition for determination of sulfite in aquatic products with pararosaniline hydrochloride,and investigate the sulfite residue situation of aquatic products in Zhoushan. Methods Each real food sample was pretreated by different methods to extract the sulfite,and the stability of coloration was investigated by changing the time duration and temperature. According to the comparison results,5258 samples of various aquatic products were collected to detect sulfite by pararosaniline hydrochloride from Jan 2010 to Dec 2012 in Zhoushan. Results The results showed that the contents of sulfite in aquatic products by mercuric sodium tetrachloride were higher than the other methods,and the stability of coloration changed with temperature. The investigation of sulfite content in aquatic products in Zhoushan showed that the detection rates of sulfite were between 4. 7% and 90. 9%,and the maximum value of residue was 558 mg /kg. Conclusion Part of the samples contained a high level of sulphite,which should be paid more attentions by customer and the regulator.
